Mitchell was presented an Award from the Houston Corporate Recycling Council in 1997 for Environmental Excellence for his efforts to protect and enhance the Texas environment and to promote the development of recycling industries in the state when he was the Executive Chef at Rainbow Lodge in Houston, Texas

In 1999 the state of Texas honored Mitchell for taking care of Texas through outstanding efforts in environmental protection and pollution prevention from the Texas Natural
Resource Conservation Commission.

 

Mitchell has served as a member of the Urban Harvest Board of Directors in Houston, Texas. A member of the Chef’s Collaborative 2000, Mitchell addressed the recycling and waste issues with a national committee.
Restaurant Recyclers is a member of the Texas Restaurant Association.

Mitchell’s dream to start Restaurant Recyclers came many years ago when he noticed so much waste going to the landfills. In most of the restaurants where he was the chef, he usually had a garden where he composted all of his food waste and grew heirloom varieties of herbs and vegetables for the restaurant. He had separate containers for all of the kitchen’s recycables. “From the Earth to the Table and back to the Earth”
